"The secrets of the cloister" is a project to rediscover and enhance the ancient traditions of Palermo's convent pastry: an important inheritance that cannot be lost and that must be handed down to future generations.

 

The "spezieria" or "confectionery" of the monastery of Santa Caterina was the place in charge of making ricotta pies, almond biscuits, stuffed pastries, cakes, preserves and so on. The sale of sweets (at the parlor wheel) represented an important source of income for the survival of the monastery.

The recipes of the convent pastry were once secret and were only revealed by the older nuns to the younger ones who inherited them.
